I think the use of the exclamation is to highlight the interest and adoration the speaker has towards the sky. The mentioning of night and day signifies the skies constant involvement and presence. The words “burnished” and “rubbed” created an image of hands working to polish “the stars so they keep on shining”. I think it was quite clever and creative as it created a strong image in my head and to be completed with “the hands keep on moving”, implying that there needs to be constant work done by humans to ensure the quality and beauty of our bright days and beautiful nights.
